Ingredients
- 250 g blueberries or lingonberries, fresh or frozen
- 2 tbsp sugar
- 2 tbsp water
- 1 tsp lemon juice
- 1 tsp potato starch
- 1 tbsp cold water
Method
- Simmer berries, sugar and 2 tablespoons water for 6–8 minutes.
- Mix potato starch with 1 tablespoon cold water.
- Remove the pan from direct heat, stir in the slurry and return briefly until the sauce just thickens.
- Add lemon juice and cool.
Serve it with
Oat porridge, pancakes, rice pudding, yogurt or vanilla ice cream.
Kitchen note: Taste before serving. Mustard, yogurt and berries vary in acidity, so a small adjustment of salt, lemon or honey may make the balance perfect.
